Meet Jake Jameson

Hi, I’m Jake Jameson, a 41-year-old plant-based chef living in Portland, Oregon, and food has been my compass for as long as I can remember. If you’d asked me ten years ago where I saw myself, I might’ve mumbled something about food trucks or artisan toast, but life had other ideas—beautiful, green, and deliciously unprocessed ideas.

Roots in Real Food

I grew up in a small town in northern California where Sunday meals were a sacred ritual, and vegetables came straight from our backyard. My mom made magic out of zucchini and lentils before it was trendy, and my dad taught me the quiet patience of growing food from the earth. Still, I didn’t fully embrace a plant-based lifestyle until my late twenties. Like many, I started with curiosity, a few documentaries, and a reluctant goodbye to cheese. What began as an experiment quickly became a revelation. My energy changed, my creativity exploded, and suddenly, I was spending weekends inventing cauliflower-based comfort food and sweet potato brownies.

From Culinary School to Kitchen Trials

I trained at a culinary school in New York, but it was the farmers’ markets, vegan potlucks, and kitchen mishaps that really taught me how to cook. My philosophy? Keep it simple, seasonal, and soulful. I believe that food should nourish not just your body, but your spirit and your community too.

Embracing the Mess

Starting my plant-based journey wasn’t without its bumps. I once served a beet “tartare” that turned a dinner party into a beet-red horror show, and I’ve burned more chickpea pancakes than I care to admit. But those flops taught me resilience and reminded me that joy in cooking comes not just from the results, but from the play, the surprise, and even the occasional mess.
