Ingredients

1 cup green or brown lentils

3/4 cup farro

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, chopped

1 tsp dried thyme

1 tsp dried rosemary

8 cups vegetable broth


Instructions

1. Heat 1 tbsp olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5 minutes.

2. Stir in garlic, carrots, and celery. Cook another 3–5 minutes until softened.

3. Add thyme and rosemary; stir to coat vegetables.

4. Pour in broth, lentils, and farro. Bring to a boil.

5. Reduce heat and simmer uncovered for 40–50 minutes, stirring occasionally.

6. Taste and adjust seasoning with salt, pepper, or chili flakes.

7. Serve warm with crusty bread or refrigerate for later.

Notes

No need to soak lentils or pearled farro.

Can be customized with greens, tomatoes, or spices.

Freezes well up to 3 months.
