A savory, comforting green olive soup with potatoes, herbs, and briny depth. Plant-based and perfect for cozy meals.
Ingredients
2 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
2 potatoes, cubed
1 celery stalk, sliced
1 bay leaf
1 tsp thyme
1/2 tsp white pepper
1/2 cup green olives, chopped
4 cups vegetable broth
1/2 cup white beans (optional)
1 tbsp lemon juice
Salt to taste
Fresh parsley or dill (garnish)
Instructions
1. Heat olive oil in pot and sauté onion, garlic, and celery for 5 minutes.
2. Add potatoes, bay leaf, thyme, and pepper. Pour in broth and bring to a boil.
3. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
4. Blend partially if desired. Add green olives, beans, and lemon juice.
5. Simmer 5 more minutes. Taste and adjust seasoning.
6. Garnish with herbs. Serve hot.
Notes
Use cracked or home-cured green olives for best flavor.
Soup can be partially blended for creaminess or left chunky.
Serve with crusty bread or lemony salad.
