Ingredients
24 pitted green olives
1/2 cup crumbled feta cheese (or vegan feta)
1 tsp lemon zest
1 tbsp extra virgin olive oil
1/2 tsp dried oregano
Optional: minced garlic or red pepper flakes
Instructions
1. Drain and pat dry the olives.
2. Mash feta with lemon zest, olive oil, and oregano. Add optional garlic or pepper flakes.
3. Use a piping bag or small spoon to stuff each olive.
4. Arrange on serving dish and drizzle with more olive oil.
5. Chill for 30 minutes before serving if desired.
Notes
Use Castelvetrano or Spanish Queen olives for best results.
Try variations like sun-dried tomato, roasted garlic, or fresh herbs.
Store in airtight container in the fridge for up to one week.
