Description
Caraway seed cookies are a unique, plant-based twist on traditional sweet treats. Lightly sweet, chewy, and fragrant with earthy, citrusy caraway seeds, these cookies are nostalgic, wholesome, and perfect with tea or fruit.
Ingredients
1 ½ cups all-purpose flour
1 tsp baking powder
¼ tsp sea salt
1 tbsp ground flaxseed + 2.5 tbsp water
½ cup melted coconut oil
¼ cup maple syrup
¼ cup organic brown sugar or coconut sugar
2 tsp caraway seeds (lightly toasted)
1 tsp vanilla bean
Instructions
1. Mix the flax egg by combining ground flaxseed and water. Let sit 5 minutes until gel-like.
2. Whisk flour, baking powder, salt, and toasted caraway seeds in a large bowl.
3. In another bowl, mix coconut oil, maple syrup, brown sugar, vanilla, and flax egg.
4. Combine dry ingredients into wet and mix until just combined.
5. Chill dough for 15–30 minutes (optional).
6. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
7. Scoop tablespoon-sized dough balls, flatten slightly on the sheet.
8. Bake 12–15 minutes until edges are golden.
9. Cool at least 5 minutes before serving.
Notes
Optional: Add chopped rosemary or orange zest for seasonal variation.
For a crispier edge, bake slightly longer.
Pairs well with tea, coffee, or yogurt and fruit.
