Description
Beef farro soup is a nourishing, hearty meal that combines tender beef, chewy farro, and flavorful vegetables in a rich broth. It’s the ultimate comfort food, perfect for chilly nights and easy to make in large batches for freezing or leftovers.
Ingredients
1 lb beef chuck, cubed
3/4 cup uncooked farro
1 yellow onion, diced
2 carrots, chopped
2 celery stalks, sliced
4 cloves garlic, minced
1 can diced tomatoes
6 cups beef broth
Fresh thyme & bay leaf
Salt and pepper to taste
Optional: spinach, kale, or potatoes
Instructions
1. Brown the beef in a large pot over medium-high heat.
2. Remove beef and sauté onions, garlic, celery, and carrots for 8–10 minutes.
3. Add beef back with tomatoes, broth, bay leaf, thyme, and farro.
4. Bring to a boil, reduce heat, and simmer uncovered for 60–70 minutes.
5. Stir occasionally to prevent sticking.
6. Adjust salt, pepper, and herbs to taste.
7. Serve hot with fresh parsley and crusty bread.
Notes
Use semi-pearled or pearled farro for quicker cooking.
Add pre-cooked farro in the last 15 minutes to avoid mushiness.
Soup stores well in fridge (5 days) or freezer (3 months).
Reheat with a splash of broth for best consistency.
Serve with lemon-dressed greens or in sourdough bowls for flair.
