Description
A savory, earthy baked farro dish infused with mushrooms, rosemary, and garlic. Perfect for cozy nights or a flavorful meal prep option.
Ingredients
1½ cups dry pearled farro
2½ cups vegetable broth
1 tbsp olive oil
Pinch of sea salt
2 cups sliced mushrooms
2 garlic cloves, chopped
1 small onion, diced
1 tbsp fresh rosemary, chopped
¼ cup nutritional yeast
Drizzle of lemon juice
Optional garnish: rosemary sprigs, cracked pepper
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish with olive oil.
2. In a large bowl, mix farro, broth, olive oil, and salt.
3. Fold in mushrooms, garlic, onion, and rosemary.
4. Pour into dish and cover with foil. Bake for 40 minutes.
5. Remove foil and stir. Add nutritional yeast and lemon juice.
6. Bake uncovered for 10–15 more minutes until liquid is absorbed and top is crisp.
7. Let rest 5 minutes before serving. Garnish as desired.
Notes
Use vegetable broth for deeper flavor or substitute with water and bouillon.
For a cheesy twist, add vegan parmesan on top before final bake.
Great for batch cooking — keeps well in fridge or freezer.
