Ingredients
2 large English cucumbers (or 6 Persian cucumbers), thinly sliced
3 tbsp vegan mayo (or regular mayo)
1 tbsp Sriracha (or gochujang)
1 tsp toasted sesame oil
1 tbsp rice vinegar
1 tsp sugar or maple syrup
Pinch of salt and black pepper to taste
Sesame seeds and chopped scallions (optional garnish)
Instructions
1. Slice your cucumbers thinly using a mandoline or sharp knife.
2. In a mixing bowl, whisk together vegan mayo, Sriracha, sesame oil, rice vinegar, and sugar until creamy and orange-hued.
3. Add cucumber slices to the bowl and toss well to coat.
4. Season with a pinch of salt and black pepper to taste.
5. Optional: Let the salad marinate for 15–30 minutes to deepen the flavor.
6. Top with sesame seeds and chopped scallions before serving.
