Ingredients
4 large poblano peppers, halved lengthwise, seeds removed
1 lb ground turkey (93% lean recommended)
1 small yellow onion, diced
2 cloves garlic, minced
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp chili powder (optional)
1 cup cooked brown rice or quinoa
1/2 cup black beans, rinsed
1/2 cup corn (fresh or frozen)
1/4 cup tomato paste or crushed tomatoes
1 tsp olive oil
Salt and pepper to taste
Optional toppings: avocado slices, dairy-free cheese, lime wedges
Instructions
1. Preheat oven to 375°F and lightly grease a baking dish.
2. Cut poblano peppers in half lengthwise, remove seeds, and arrange them cut-side up.
3. In a skillet, heat 1 tsp olive oil. Add onion and garlic. Sauté until translucent (3–4 minutes).
4. Add ground turkey. Cook, breaking it apart, until no longer pink (about 7 minutes).
5. Stir in spices, corn, black beans, tomato paste, and cooked rice. Cook 3–5 minutes more. Adjust salt and pepper to taste.
6. Spoon mixture into poblano halves evenly. Cover with foil.
7. Bake for 20 minutes. Uncover and bake another 5 minutes for crisp tops.
8. Serve with toppings of your choice like dairy-free crema or sliced avocado.
