Ingredients
1½ cups plant-based milk (almond, oat, or cashew)
1 cup dairy-free vanilla or mint chip ice cream
¼ cup fresh mint leaves (or ½ tsp peppermint bean)
1 frozen banana
¼ cup vegan dark chocolate chips
Instructions
1. Add plant-based milk and frozen banana to a high-speed blender.
2. Add mint leaves (or peppermint bean) and ice cream.
3. Blend until completely smooth.
4. Add half the chocolate chips and pulse for a chunky texture.
5. Pour into chilled glasses and stir in or top with remaining chocolate chips.
6. Serve immediately with a fresh mint sprig.
Notes
Use spinach or matcha to enhance green color naturally.
Swap banana with frozen cauliflower for a lower sugar option.
