Instructions

1. Slice off the ends of the prickly pears.

2. Make a vertical slit along the skin and peel off the skin carefully.

3. Dice the fruit and set in a bowl (wear gloves if needed).

4. Combine diced prickly pear, onion, jalapeño, and cilantro in a mixing bowl.

5. Squeeze in lime juice and toss gently.

6. Chill for 30 minutes before serving.
