Description

These plant-based layered chocolate mint bars are a celebration in every bite—cool mint cream between rich chocolate layers, inspired by nostalgic flavors and upgraded with whole, vegan ingredients.


Ingredients

1 cup almond flour (or oat flour for nut-free)

1/4 cup cacao powder

2 tbsp maple syrup

2 cups powdered sugar

6 tbsp vegan butter (softened)

1 1/2 tsp peppermint oil

1 tbsp non-dairy milk

1 cup dark vegan chocolate chips

2 tbsp coconut cream

Optional dash peppermint oil


Instructions

1. In a large bowl, mix almond flour, cacao powder, and maple syrup. Press firmly into a lined 9×9 pan. Freeze for 15 minutes.

2. While the base sets, beat powdered sugar, softened vegan butter, peppermint oil, and non-dairy milk until smooth.

3. Spread the mint layer over the chilled base. Freeze for 20 more minutes.

4. Melt chocolate chips with coconut cream and optional mint extract. Stir until shiny and pour over the mint layer.

5. Shake pan lightly to even out the chocolate. Chill for another 30 minutes or until fully set.

6. Use a warm knife to cut into clean squares before serving.

Notes

Swap almond flour with oat flour for nut-free.

Store in fridge up to 7 days or freeze up to 60 days.

Let sit at room temp 10 minutes before serving.

Add flaky salt, crushed pistachios, or shaved chocolate for presentation.
