Description
These vibrantly colored purple sweet potatoes are roasted, steamed, or baked to bring out their naturally rich flavor and beautiful hue. Rich in antioxidants and fiber, they’re the perfect base for comforting plant-based meals or eye-catching sides.
Ingredients
2–3 medium purple sweet potatoes (Okinawan or Stokes varietal)
1 tablespoon olive oil or melted coconut oil
½ teaspoon sea salt
¼ teaspoon black pepper
Optional herbs: rosemary, thyme, or smoked paprika
Optional garnishes: sesame seeds, green onions, vegan sour cream
Instructions
1. Wash your purple sweet potatoes thoroughly—no need to peel if roasting or baking.
2. Decide on a cooking method: roasting, baking whole, or steaming.
3. For roasting: Cut into 1-inch cubes. Toss with oil, salt, and optional seasonings.
4. Spread on a parchment-lined baking tray. Roast at 425°F for 30 minutes, flipping halfway.
5. For baking whole: Poke holes with a fork, rub with oil, and bake at 375°F for 60–75 minutes.
6. For steaming: Peel and cut into even chunks; steam for 15–20 minutes until fork-tender.
7. Serve warm and garnish with sesame seeds, sour cream, or fresh herbs as desired.
Notes
Roasting enhances natural sugars; steaming retains moisture for soups and purees. For mashing, add coconut milk to increase moisture. Skins are edible and nutritious—keep them on for rustic dishes.
