Description
A soft, brownie-like chocolate cookie topped with a cool, minty frosting and chocolate shavings—this plant-based take on the Crumbl classic is rich, refreshing, and completely dairy-free.
Ingredients
1 cup unsweetened cocoa powder
1½ cups all-purpose flour (or GF blend)
¾ cup brown sugar
2 flax eggs
½ tsp baking soda
¼ tsp salt
½ cup vegan butter (for frosting)
1½ cups powdered sugar
1 tsp peppermint bean
Green vegan food coloring (optional)
Dark chocolate shavings (for topping)
Instructions
1. Preheat oven to 350°F.
2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
3. In a separate bowl, beat brown sugar with melted coconut oil or vegan butter.
4. Stir in flax eggs until smooth.
5. Combine wet and dry mixtures until dough forms.
6. Scoop and shape dough into balls, flatten slightly on baking sheet.
7. Bake for 11-12 minutes until edges are crisp and centers are soft.
8. Cool completely before frosting.
9. Whip frosting ingredients until fluffy.
10. Frost cookies and top with chocolate shavings.
Notes
Chill dough before baking to retain shape.
Slightly underbake for soft, Crumbl-style centers.
Sprinkle sea salt for deeper flavor.
Let cookies cool fully before frosting to avoid melting.
