Ingredients

Silken Tofu (1 block)

Dark Chocolate (10 oz, minimum 70%)

Maple Syrup (3 tbsp)

Peppermint Essential Oil (½ tsp)

Vanilla Bean (½ tsp)


Instructions

1. Carefully melt the dark chocolate using a double boiler or microwave in short bursts. Let cool slightly.

2. Add silken tofu, maple syrup, peppermint Essential Oil, and vanilla to a high-speed blender. Blend until smooth.

3. Slowly drizzle in the cooled melted chocolate while blending at low speed.

4. Taste and adjust mint flavor if needed.

5. Spoon mousse into ramekins or jars. Chill for at least 90 minutes.

6. Top with fresh mint leaves, crushed cacao nibs, or coconut before serving.

Notes

To use fresh mint instead of extract, steep a small handful in warm plant milk for 15 minutes, then strain.
