Ingredients
4 medium purple sweet potatoes
1 tablespoon olive oil (optional)
Sea salt to taste
Optional toppings: tahini, cashew cream, sautéed greens, spicy chickpeas, cinnamon, maple syrup
Instructions
1. Preheat oven to 400°F (200°C).
2. Scrub sweet potatoes and pat dry.
3. Prick each potato a few times with a fork.
4. Rub with olive oil and sprinkle with sea salt if desired.
5. Place directly on oven rack with a tray below to catch drips.
6. Bake for 45–60 minutes until tender and skin puffs.
7. Remove, slice open, fluff with fork, and top as you like.
Notes
